Description
Roasted garlic tomatoes bring a deep, rich elegant flavor to many recipes. Use them for quiche, salads, sandwiches and more. You'll absolutely love them!

- 4 large red tomatoes
- 1 small clove of garlic, finely diced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2-3 tablespoons of olive oil (more if needed)
Instructions
- Core the tomatoes. You can use a coring tool or paring knife for this. Try to have a garbage bowl or trash can nearby because this whole process gets messy.
- Cut the tomatoes in half and remove all the seeds and juice with your fingers.
- Finely dice one clove of garlic.
- Put the tomatoes in a baking dish.
- Sprinkle the garlic on top of all the tomatoes.
- Drizzle olive oil on tomatoes making sure some of it is on the bottom of the baking dish.
- Season with salt and pepper.
- Bake in a pre-heated oven at 400 degrees for one hour. My oven runs hot so it might take longer (or shorter) depending on your oven. If you want them a little charred cook them a bit longer.
Notes
- If you’re not a garlic person just skip the garlic. They are just as delicious!
