Got a cheap and easy dinner for you with extra crispy Shake-n-Bake drumsticks and easy veggies. You’re going to love this one!

- 1 medium garlic clove, finely diced
- 4 roma tomatoes, halved
- 2 small to medium zucchinis, quartered
- 2 tablespoon olive oil, divided
- 8 chicken drumsticks
- 1 box of Extra Crispy Shake-n-Bake (both packets)
- 1 tablespoon parsley, finely diced (optional)
- 1/8 to 1/4 teaspoon salt
- 1/8 to 1/4 teaspoon pepper

Finely dice a small-to-medium clove of garlic.

Slice the plum tomatoes in half lengthwise – you’ll have eight halves.
- Add a pinch of the finely diced garlic on top of each tomato and transfer to a large parchment paper-lined sheet pan. The chicken and tomatoes will go on the same sheet pan.
- Cut the tips from the top and bottom of the zucchini. Then cut them in half in the middle – you’ll have four pieces now. Cut each piece in half lengthwise. It’s hard to instruct how to do this – my video shows this well and the picture in the gallery above shows it too. J
- Transfer eight zucchini pieces to a small sheet pan and brush a little olive oil on top of each zucchini piece. Season with a light sprinkling of salt and pepper on the cut side only. Place the zucchini cut-side-down on sheet pan and set side.
- Place the chicken drumsticks in a large bowl and add about a tablespoon of olive oil. Toss the chicken to coat in the olive oil.
- In another large bowl, add both packets of Extra Crispy Shake-n-Bake mix from the box.
- Place the drumsticks in the Shake-n-Bake and thoroughly coat the chicken with the mix – then transfer to the sheet pan with tomatoes.
- If you want, you can add any remaining Shake-n-Bake crumbs to the tops of the tomatoes – it’s very yummy.
- Drizzle a little olive oil on the tomatoes (maybe 1 tablespoon total), then rub them on the sheet pan to get some of that olive oil on the bottoms of the tomatoes too.
- Bake the chicken and tomatoes in a preheated oven at 425 degrees for about 40 minutes. Internal chicken temperature should be 165 degrees before consuming.
- The zucchini doesn’t need as long to cook, so just add that to the oven in the last 15-20 minutes of the chicken cooking and it will all be finished at the same time.
- While everything is cooking you can finely chop some fresh parsley garnish if you want. This is optional.
- Plate your food ahead of time or serve family style on a large plate or platter. I show you how to do both in the video.
