Pork Chops with Stove Top Stuffing, Caramelized Onions and Apples

Pork chops and apples are a match made in culinary heaven. And pork chops with Stove Top stuffing, caramelized onions and apples? To. Die. For.


Ingredients

Units Scale
  • 4 pork chops (about 3/4” to 1” thickness is good)
  • Salt and pepper
  • Chopped or dried parsley garnish, optional

For the stuffing (follow box instructions)

  • 1 box Stove Top pork stuffing (6 ounce box)
  • 1 1/2 cups hot water
  • 4 tablespoon butter

For the caramelized onions & apples

  • 3 medium-to-large onions
  • 3 tablespoons of butter
  • 1 tablespoon olive oil
  • 2 apples, sliced (any kind)
  • 1 teaspoon salt
  • 1/4 to 1/2 teaspoon pepper
  • 1 tablespoon sugar, optional

Instructions

  1. Don’t forget to watch my video which shows all the step-by-step instructions. 
  2. Slice all the onions into strips. Peel the onions, cut in half and then cut into thin strips. 
  3. Add onions to a large pan with butter, olive oil, salt and pepper. Mix well to coat all the onions in the butter and olive oil. Cook on low-to-medium heat for 10-15 minutes. Stir as needed. 
  4. While the onions are cooking, do your other prep. Follow the package instructions and microwave the Stove Top stuffing. Once cooked, remove plastic wrap and mix well with a fork. 
  5. Salt and pepper both sides of the pork chops, fork them to tenderize then set aside.
  6.  Peel, remove core and slice the apples. Try to slice them into about ¼” or so pieces. If you want more apple, slice three apples instead of two. I found two was enough – your call. 
  7. Once the onions have cooked 10-15 minutes and have started browning, add the apples to the pan and stir well. Let the mixture cook another 10-15 minutes until onions are fully caramelized and golden brown in color and apples are tender. This is optional, but you can at one tablespoon of sugar at the end and cook five more minutes. It adds a very slight sweetness which I like. 
  8. Divide the stuffing into four portions for the four pork chops. Shape the stuffing into roundish patties to fit on the top of the pork chops. Press down on the stuffing to make sure the whole piece of pork is covered with the stuffing. Bake in a preheated oven at 400 degrees for 12-13 minutes. Ovens are different. Mine runs hot so yours may take a bit longer or shorter. Internal temperature of pork should be 145 degrees before consuming. 
  9. If you are making a side dish, liked steamed veggies, you can cook that once the pork is in the oven. I steamed some asparagus. A salad would go well with this meal too! If you are garnishing with fresh parsley (optional) you can chop that while the pork is cooking. 
  10. Remove the pork from the oven and let the pork sit a couple minutes before serving. Top with the caramelized onions and apples. Garnish with fresh chopped parsley (optional).

Notes

  1. I used green apples for this recipe. You can use whatever apples you want.
