The best salsa you'll ever make is right here! Fresh, CSA ingredients chopped and seasoned to perfection. You’re gonna love this one!


Ingredients

Units Scale
  • 3 cups diced tomatoes (I used 4 medium tomatoes and 2 plum tomatoes)
  • 1/4 cup of very finely diced onion (any kind)
  • 1 tablespoon finely chopped cilantro
  • 1/4 teaspoon finely diced jalapeno
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon lime juice
  • 2 tablespoons white vinegar
  • 3/4 teaspoon of salt, more if you want
  • 1/4 teaspoon cumin
  • 1/2 clove of garlic, finely diced

Instructions

  1. Core, cut and gut your tomatoes. Remove the core with a coring tool. If you don’t have that just use a paring knife. Cut all the tomatoes in half. Using your fingers remove all the pulp/guts of the tomatoes. Make sure to have a bowl on hand for all the pulp. It gets messy! 
  2. Next, take your tomato halves and slice them into thin strips. The dice the thin strips into very small pieces and put them in a large bowl.
  3.  For the onion, I used half of a very small onion. I slice it into strips, then diced it into fine pieces as well. Add it to your bowl with the tomatoes. 
  4. Finely chop the cilantro and add to the bowl. 
  5. Squeeze your fresh lemon and lime and add to the bowl. I cut them in half and squeezed what I needed into a ramekin. Then I used a measuring spoon to make sure I was adding the correct amount. 
  6. Now add the salt, cumin, and vinegar to the bowl. 
  7. For the jalapeno. I don’t like my salsa too spicy so I cut just the tip of the jalapeno. I diced it finely and added it to the bowl. If you are more daring, you can certainly add more jalapeno if you like! 
  8. Finely dice the garlic and add to the bowl. 
  9. Mix all ingredients together until well combined. 
  10. Enjoy with chips and salsa, on your eggs, fajitas, quesadillas, or empanadas!
