Easy Blueberry Ice Cream Topping

Description

This easy blueberry ice cream topping mixes orange zest, juice, honey & blueberries together for a fantastic summer dessert offering.


Ingredients

Units Scale
  • 2 1/2 cups blueberries
  • 2 tablespoons of good honey
  • 1 zest from a medium orange
  • 1/2 the juice from medium orange
  • Mint leaves, optional garnish

Instructions

  1. Put the blueberries in a large bowl. 
  2. Using a microplane zest one medium orange and add zest to the bowl. If you don’t have a microplane, just use the smallest side of a box grater to zest it. 
  3. Cut the orange in half and juice half of it right into the blueberry bowl. 
  4. Add the honey to the blueberry bowl. Mix to combine the ingredients. 
  5. Spoon on top of vanilla ice cream and garnish with mint leaves, if using. Drizzle a little extra honey on top if you want. 
  6. You can also mix this into your morning yogurt. Enjoy!
