
It's getting hot here in New England. Not crazy hot just yet, but hot enough that I want ice cream. That's how I know summer is really coming. There is a burst of heat for 2-3 days and it feels too early to turn on the air conditioner, but somehow, I'm dripping in sweat and have to turn on the air conditioner. This is when I start craving vanilla ice cream with a very easy blueberry ice cream topping I'm sharing with you today.
This elegant blueberry ice cream topping makes for an effortless dessert
There isn't much to it in terms of preparation, but believe me, this topping will be remembered. You can serve this on top of scoops of vanilla ice cream, but you can also mix it in with your morning yogurt. I was a private chef years ago. My clients loved to serve this after their dinner parties in the summer. It would alternate between fresh pies from the local farm or vanilla ice cream with this blueberry topping. It was always a crowd pleaser and it's so easy to make.

We were our going for a drive on a sunny afternoon and their farm stand was open. I saw the jars of honey and knew I wanted to try it. It is the best honey I've ever had. Easy Blueberry Ice Cream Topping

Description
This easy blueberry ice cream topping mixes orange zest, juice, honey & blueberries together for a fantastic summer dessert offering.
Ingredients
- 2 ½ cups blueberries
- 2 tablespoons of good honey
- 1 zest from a medium orange
- ½ the juice from medium orange
- Mint leaves, optional garnish
Instructions
- Put the blueberries in a large bowl.
- Using a microplane zest one medium orange and add zest to the bowl. If you don’t have a microplane, just use the smallest side of a box grater to zest it.
- Cut the orange in half and juice half of it right into the blueberry bowl.
- Add the honey to the blueberry bowl. Mix to combine the ingredients.
- Spoon on top of vanilla ice cream and garnish with mint leaves, if using. Drizzle a little extra honey on top if you want.
- You can also mix this into your morning yogurt. Enjoy!
