    Thai Lettuce Wraps with Rotisserie Chicken

    I have been making these Thai lettuce wraps with rotisserie chicken for many years. It's one of my go-to healthier meal options for lunches or dinners. It's very easy to make and a great lighter meal option. No need to poach or bake chicken ahead of time. Rotisserie chicken is coming to the rescue for this one. It's $5-6 for an entire cooked chicken and it's perfect for this recipe.

    Rotisserie Chicken for Thai Lettice Wraps: Just Do It

    I love using rotisserie chicken when I'm trying to take a short cut, save a little money, and have something already done. And with rotisserie chicken, you get cooked food that's already seasoned and costs a lot less than buying boneless breast of chicken and preparing it yourself. These tasty, crunchy little wraps will make it seem like you spent hours in the kitchen. But alas, you didn't - you cooked smarter. And if I'm splitting hairs (with myself) you didn't really cook at all actually!

    This is a salad served cold. Simply pull all the chicken from the bird and chop into uniform-ish chunks. Chop the celery, onion, pepper and cilantro and add to the chicken bowl. Yes, I know some of you don't like cilantro and probably want to exit this recipe now. However, basil is a wonderful alternative to cilantro and will work just as well for this recipe. I promise. So come back down from the cilantro ledge, and let's get back to making our Thai lettuce wraps!

    Easy Steps to Making Thai Lettuce Wraps

    I've made this recipe many times for many occasions, and they always get rave reviews. This is a simple recipe but packs a punch of flavor and crunch. They make great leftovers too so you can take them to work for lunch. Pack a few lettuce leaves and a small container of chicken and you have your lunches for a few days. This is also a great picnic option. Very low maintenance and so easy to make.

    Description

    Cheap, easy and healthy these Thai lettuce wraps made with rotisserie chicken are perfect for an appetizer, lunch or dinner. They’re crunchalicious!


    Ingredients

    Units Scale
    • 1 whole cooked rotisserie chicken
    • 4 celery stalks, finely diced
    • 1 small/medium red pepper, finely diced
    • ¼ cup red onion, finely diced
    • 1 tablespoon chopped cilantro or basil, plus more for garnish
    • 1 jar of Thai peanut sauce (7 ounce jar)
    • ½ teaspoon salt
    • ¼ teaspoon pepper
    • 2-3 heads of Bibb lettuce (a.k.a butter lettuce - see note #1)

    Instructions

    1. Peel the skin from one cooked rotisserie chicken, pull all the meat from the bird and chop the chicken into uniform-ish pieces. Add to a large bowl. 
    2. Finely dice the celery stalks. I usually take one stalk at a time and slice it into four strips, then dice down finely from there. Add to bowl. 
    3. Finely dice the red pepper. Cut the pepper into four large pieces around the core. Cut pieces into strips, then dice down into smaller pieces from there. Add to bowl. 
    4. Finely dice the red onion. Cut into thin strips lengthwise then dice down into smaller bits from there. You’ll need to run your knife over the onions a few more times to get them finely diced. Add to bowl. 
    5. Chop your cilantro (or basil). Add to bowl. Chop a little extra too for garnish. 
    6. Add salt and pepper to the bowl. 
    7. Add the 7-ounce jar of Thai peanut sauce to the bowl. Mix all ingredients together until everything is coated in the sauce. Give it a taste here. Add more salt & pepper if you like. 
    8. Place Bibb lettuce leaves on a platter and spoon the chicken mixture onto the lettuce. I like serving on a platter, but you can do what you like! If you want everyone to make their own just leave it all out and everyone can serve themselves.

    Notes

    1. Bibb lettuce is also called Boston Bibb or Butter Lettuce. The heads are usually pretty small so you may need 2-3 heads for this recipe which will depend on the size. 
    2. I’ve tried most brands of peanut sauce and I’ve really enjoyed all of them! You are not bound to use Sun Luck brand. It was the one they had at the store that day so I went with it.
