    Four Awesome Avocado Toast Ideas

Next time you're planning Sunday brunch, you should try one of my awesome avocado toast ideas!

Avocado toast isn't going anywhere. Despite its popularity in recent years, people have been making it for a very long time. So rather than going to a restaurant and paying $10-12 dollars for this posh item, I'm going to share four awesome avocado toast ideas.

I don't see the point of smashing the avocados, but if you like smashing things, to each his own. I love the simplicity of slicing this buttery green miracle and laying it on the toast. I always sprinkle a little salt on the avocado slices too - this is critical. The rest is up to you. Often, we'll have many kitchen staples on hand and can build a fantastic avocado toast with what we have. Tomatoes, bacon, eggs, cheese (brie, cheddar & feta are great options). But if you want avocado toast with a bit more panache you can add things like pickled red onions and fried green tomatillos.

I'm not doing a recipe card for this post because most things are self-explanatory. But I will leave links below for the roasted garlic tomatoes and pickled red onions which I made videos for. So here are my awesome avocado toast ideas!

    avocado, brie, roasted garlic tomatoes

This will always be my original favorite. The first time I ate avocado toast this was the flavor combination. I was never really into avocados before that moment. And I've never looked back since. Awesome food memory! I eat avocado toast almost every day for breakfast and it keeps me full until lunch. For this idea, you do need to make some Roasted Garlic Tomatoes so just check out my quick video for the recipe. So easy to make and so many uses!

As I've mentioned in another post, I do love that show Beat Bobby Flay and he has whipped up amazing pickled red onions in a pinch to add a crunch or a tang or a pop of color in his food. He pours red wine vinegar in a pot and always uses grenadine too (reminds me of Shirley Temples when I was a kid). Then he throws in some sugar and other stuff and, of course, they come out amazing. So I chose his pickled red onion recipe and they are fantastic! I made them for my Pork Schnitzel Sandwich and still had them when I filmed this avocado post. You can find the recipe here: Bobby Flay's Fantastic Pickled Red Onions

avocado, fried green tomatillos, garlic roasted tomatoes & fresh basil

This one is very special. I found huge tomatillos at the grocery store and decided I HAD to not only use them for avocado toast, but also for a Fried Green Tomatillo Sandwich. So the recipe for the fried green tomatillos is in that sandwich recipe. Please check that out because if you're making the fried tomatillos - why not have multiple uses for them? They are awesome! Of course, if you can find green tomatoes, you can certainly use those too. I can never find those except at farm stands in the summer. I love fresh basil and think fresh herbs are so important for flavor so don't skip that. Here is the link for my Delicious Roasted Garlic Tomatoes too. Hope you enjoy!

avocado, bacon, fried egg, everything bagel seasoning, & sriracha sauce

What avocado toast post would be complete without bacon? Someone recently told me they love putting everything bagel seasoning on their avocado toast and I thought: oh yeah, I'm doing that. It is pretty common to find that in the spice aisle at the local grocery store and I highly recommend it. Plus, if you're eating an everything bagel, let's face it: only the top has the seeds and they mostly fall off the bottom. Now you can sprinkle more of it on top of your cream cheese! So there's two uses for everything bagel seasoning! But really, avocado, bacon and sriracha is a thing of beauty. I know, I know, sriracha sauce has been done to death in recent years, but I think - like avocado toast - it's here to stay. And I'm loving that.

Enjoy your time in the kitchen. During the pandemic, many of us have become more acquainted with our cooking space. Sharing delicious food with your loved ones is one of the true luxuries of life. We talk, we laugh, we share. Now get cooking!
