    Easy, Delicious Roasted Garlic Tomatoes

    You know I love my roasted tomatoes and this recipe is so simple. Everyone should have an easy, delicious roasted garlic tomato recipe in their culinary repertoire. I've made them several times for recipes here on my site and I realized they deserve their own video! They stand on their own. You can use them for so many things!

    Roasted Garlic Tomatoes Are a Must-Have in my Kitchen

    I cannot say enough about how amazing roasted tomatoes taste. There is this deep, rich roasty flavor that can add a beautiful layer of elegance to a number of recipes. If you've been to my blog before, you know that I used them for my Savory Puff Pastry - 2 Ways. I roasted them a few weeks ago for a Roasted Tomato, Asparagus and Gruyere Quiche. If you like Avocado Toast you can put roasted tomatoes on that. Burgers. Salads. All kinds of sandwiches. Just last week I made them for veggie sandwiches for a road trip. Roasted Eggplant, roasted garlic tomatoes, pesto, fresh mozzarella, roasted red pepper hummus and greens. We had a feast! Oh, and if you don't like garlic just skip that part. They are also awesome completely on their own!

    Follow along with my video and I'll show you how to make these easy, delicious roasted garlic tomatoes. They're a real treasure and couldn't be easier to prepare.

    The Six Easy Steps of Roasting Tomatoes:

    1. Remove tomato cores.
    2. Cut tomatoes in half.
    3. Using your fingers, scoop out the tomato pulp and discard.
    4. Line a baking dish or two with the tomato halves.
    5. Drizzle with olive oil and season with salt and pepper.
    6. Cook in a pre-heated oven at 400 degrees for one hour. More if you want them charred which I do prefer.

    Description

    Roasted garlic tomatoes bring a deep, rich elegant flavor to many recipes. Use them for quiche, salads, sandwiches and more. You'll absolutely love them!


    Ingredients

    Scale
    • 4 large red tomatoes
    • 1 small clove of garlic, finely diced
    • ½ teaspoon salt
    • ¼ teaspoon pepper
    • 2-3 tablespoons of olive oil (more if needed)

    Instructions

    1. Core the tomatoes.  You can use a coring tool or paring knife for this. Try to have a garbage bowl or trash can nearby because this whole process gets messy.
    2. Cut the tomatoes in half and remove all the seeds and juice with your fingers.
    3. Finely dice one clove of garlic.
    4. Put the tomatoes in a baking dish.
    5. Sprinkle the garlic on top of all the tomatoes.
    6. Drizzle olive oil on tomatoes making sure some of it is on the bottom of the baking dish.
    7. Season with salt and pepper.
    8. Bake in a pre-heated oven at 400 degrees for one hour. My oven runs hot so it might take longer (or shorter) depending on your oven. If you want them a little charred cook them a bit longer.

    Notes

    1. If you’re not a garlic person just skip the garlic. They are just as delicious!
