I am not a vegetarian but I really love tofu. And I really, really love coconut tofu. I used to order the coconut tofu with crushed pineapple at my favorite local take-out place. Then I moved and I couldn't have it anymore. It had become really expensive over the years as well, to the point that it wasn't an affordable treat anymore. Tofu is pretty cheap and so I recreated one of my favorite vegetarian meals at home. If you're a tofu lover - this one's for you!
Flavorful Tofu is not an oxymoron and I can prove it
I realize there is a school of thought that believes tofu has no flavor. It doesn't. Neither does boneless breast of chicken. Neither does risotto. Tofu is one of many foods we eat that has no real flavor. If you are a regular visitor to my website, you know my philosophy. When we encounter food that has no flavor, we have to make it taste like something.
In short, tofu CAN have flavor if we, as home chefs, choose to give it flavor. In this case, a little egg dip and some coconut flakes takes us almost all the way there. The clincher is to also add a spoonful of crushed pineapple. The basmati rice and broccolini are the proverbial cherry on the sundae for this dish.

You can make special food specifically for your packed lunches. OR, you can make a little more food than you need for dinner and package it for lunch rather than spending money on take-out.
