If you need to feed a crowd this is a great way to do it! For your next pasta night, you should try this penne pasta with sausage and garlic white wine sauce. The roasted tomatoes put this dish over the top! But can't I just use raw tomato and mix it in? No. You can't. I'm not a stickler for too many things, but for this recipe you need to roast the tomatoes which takes very little effort.
Penne Pasta and Garlic White Wine Sauce is One of My Favorite Combos
So here we go. I will start by giving a tiny bit of advice. Don't be intimidated by roasting tomatoes and don't be intimidated by making a sauce. These are very silly thoughts to have and when you have step-by-step instructions and a video to watch you needn't worry.
If you frequent my website, you know that I enjoy roasting tomatoes. I use them in my Roasted Tomato, Asparagus & Gruyere Quiche, Fried Green Tomatillo Sandwich w/Dill Sour Cream, Bacon & Microgreens, and also on my Yummy Avocado Toast. They are also awesome on salads and to mix together with yummy pasta. Roasted tomatoes taste nothing like a pan sauteed tomatoes. Throwing raw tomatoes into this dish will not give you the same gourmet result - not even close. Roasting tomatoes give them an incredible, deep flavor that you won't even believe. In the video I use garlic, but you can skip that part since we already have enough garlic for this recipe.
The Six Easy Steps of Roasting Tomatoes:
- Remove tomato cores.
- Cut tomatoes in half.
- Using your fingers, scoop out the tomato pulp and discard.
- Line a baking dish or two with the tomato halves.
- Drizzle with olive oil and season with salt and pepper.
- Cook in a pre-heated oven at 400 degrees for one hour. More if you want them charred which I do prefer.

I realize that when you come across recipes on the internet that have a sauce or a filling or a gravy, many people close the door and move on. But seriously guys, don't you want to eat delicious food? Why else would you be looking at recipes on the internet if you didn't want to eat delicious food? Also, sauces aren't that hard and for this one you probably already have some of the ingredients on hand. Another tip for you: you can make the roasted tomatoes the day before to save a little time.
