Comfort food. A term familiar to most of us which conjures up whatever our own favorite comfort foods are. Mom's spaghetti sauce the day she makes it. Potatoes au gratin on Easter Sunday. Butternut squash risotto on a cool fall evening. Air-popped popcorn with butter and truffle salt. New England Clam Chowder on a cold day in Menemsha. For me - there are so many. My current favorite is this one-pan sausage, peppers, onions and potatoes.

Sausage, Peppers, Onions and Potatoes Are a One-Pan Necessity in Life

We all have busy lives and need a few culinary tricks up our sleeves. A dinner-in-a-pinch recipe that will please everyone and take little time and few ingredients. This is that dish. Everyone should know how to whip up a delicious dinner in less than an hour.

I've always found Italian sausage to be very budget friendly. And most of us at least have onions and potatoes on hand in the pantry. If you read my blog regularly, you know I'm a certified potato fiend. Naturally, I have a stockpile of potatoes on hand at all times. They are my favorite food in the world! I know, I know - eye rolls from those tired of hearing me weirdly obsess over potatoes and a little hmmmm... from those who don't know about my love of potatoes yet.

All I'm saying is: potatoes rule. Always and forever. The combination of Italian sausage, potato, onions and peppers makes me weak in the knees.

Once you've chopped everything simply toss the veggies with olive oil and salt. Then add them to a large baking pan with the sausage. That's basically it! Follow the easy steps in my recipe card below.

Cooking With Leftovers in Mind

This one-pan sausage, peppers, onions and potatoes is a fantastic lazy man's dinner. If there is any left, depending on how many people in your household, this reheats great for lunch. You know I'm always cooking with leftovers in mind. If you work from home, you've built in an easy lunch for yourself! More time for relaxing during your lunch hour! If you're just cooking for two and have a morning commute, you can package up individual containers and grab-n-go as you run out the door for work.

One-pan Sausage, Peppers, Onions and Potatoes

Description

Comfort food is the name of the game for this fantastic one-pan sausage, pepper, onion and potato extravaganza. A dinner staple for people with busy lives.


Ingredients

Scale
  • 3-4 large potatoes
  • 8 sweet Italian sausage
  • 2 green poblano peppers
  • 1 red pepper
  • 1 ½ onions (any kind)
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • chili flakes, optional garnish
  • parmesan shaker cheese, optional garnish

Instructions

  1. Before you start the recipe, you should put your sausage in the freezer for about an hour or so. They won’t freeze, but they will become more firm and easier to cut. If you try to cut them without doing this, the sausage casings get wonky and everything falls apart. Once that is done, cut the sausage into one-inch pieces and put them in a large baking pan. Mine was 18”x 15” and worked great for this. You can split it between two baking dishes if you need to.
  2. Peel your potatoes and cut them into cubes. Keep the pieces uniform so they cook evenly. I used three small potatoes and one large. Put the potatoes in a large bowl. 
  3. Cut your green and red peppers. Cut around the core and seed part. Then cut your peppers into thick strips and then into chunks from there. (video shows all this well) 
  4. Add your peppers to the bowl with the potatoes. Add the olive oil and salt. Mix everything together until it is well combined. 
  5. Combine the potatoes and peppers with the sausage in the baking pan. Toss together and spread everything out evenly. 
  6. Cover with foil and cook in a preheated oven at 400 degrees for 25 minutes. 
  7. While it’s cooking, chop your onions. I like to add mine half-way through the cooking process. That’s my preference. If you want to add everything together at the beginning – go for it. 
  8. After 25 minutes, remove the foil, add the onions to the pan and gently mix the onions with everything else. Put back in the oven for another 20-30 minutes - UNCOVERED this time. Ovens are different. Mine runs hot, so yours may take longer or shorter to cook things. I can tell it’s done when the sausage browns a bit. 
  9. Remove from the oven and serve immediately. Serve with parmesan shaker cheese and chili flakes if you like! Enjoy!

Notes

  1. I used sweet Italian sausage, but if you want it spicy you can use spicy sausage. Or if you like garlic and cheese Italian sausage use that!
